Healthy Fruit and Nut Granola

  • 3 cups rolled oats
  • 1 cup nuts (almonds, walnuts, or pecans), chopped
  • 1/2 cup seeds (sunflower or pumpkin seeds)
  • 1/2 cup dried fruits (raisins, cranberries, or chopped dates)
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions:

  1. Preheat Your Oven: Start by preheating your oven to 325°F (165°C). Meanwhile, line a large baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Dry Ingredients: Next, in a large mixing bowl, combine the rolled oats, nuts, seeds, cinnamon, and salt.
  3. Combine the Wet Ingredients: Then, in a separate bowl, mix together the honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Blend Wet and Dry Ingredients: Afterward, pour this wet mixture over the dry ingredients and stir until everything is well coated.
  5. Spread the Mixture: Once the ingredients are well mixed, spread the mixture out evenly on the prepared baking sheet. Use a spatula to gently press it down.
  6. Bake the Granola: Subsequently, bake for 20-25 minutes, stirring once halfway through to ensure even browning. Be sure to keep an eye on it during the last few minutes to prevent burning.
  7. Add the Dried Fruits: After the granola is golden brown and crispy, remove it from the oven and let it cool completely on the baking sheet. Then, stir in the dried fruits.
  8. Store Your Granola: Following that, store your granola in an airtight container at room temperature for up to two weeks.
  9. Serve and Enjoy: Finally, enjoy your homemade granola with yogurt, milk, or even on its own as a snack!
