Ingredients:
For the Filling:
  • 500g lean ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet of taco seasoning (or make your own with a mix of cumin, paprika, chilli powder, and garlic powder)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup cooked black beans (canned or cooked from dried beans)
  • 1 cup sweetcorn kernels (canned or frozen)
  • Salt and pepper to taste
  • Olive oil for cooking
For Assembly:
  • Large, sturdy lettuce leaves (such as iceberg or Romaine)
  • Grated cheese
  • Sliced avocado
  • Salsa
  • Sour cream or Greek yogurt
  • Fresh cilantro leaves
  • Lime wedges
Instructions:
1. Prepare the Filling:
  • In a large skillet, heat a drizzle of olive oil over medium-high heat.
  • Add the chopped onion and minced garlic, and sauté until they become fragrant and translucent.
  • Add the lean ground beef or turkey and cook, breaking it apart with a spatula, until it’s browned and cooked through.
  • Stir in the taco seasoning and cook for an additional minute or two to let the spices meld with the meat.
  • Add the diced tomatoes, black beans, and sweetcorn kernels. Allow the mixture to simmer for about 5 minutes until heated through.
  • Season with salt and pepper to taste. Adjust the seasoning according to your preferences.
2. Assemble the Lettuce Wraps:
  • Carefully separate and wash the large lettuce leaves. Pat them dry with paper towels.
  • Spoon a generous portion of the taco filling onto each lettuce leaf.
  • Top the filling with grated cheese, sliced avocado, salsa, a dollop of sour cream or Greek yogurt, and fresh cilantro leaves.
  • Squeeze a bit of fresh lime juice over the top for an extra burst of flavour.
3. Serve and Enjoy:
  • Roll up the lettuce leaves around the filling, similar to how you would wrap a traditional taco.
  • Secure the wraps with toothpicks if needed.
