Ingredients:
- 250g pasta of your choice (e.g. penne, fettuccine, or spaghetti)
- 300g fresh mushrooms, sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 400g canned crushed tomatoes
- 2 teaspoon tomato purée
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
- Grated Parmesan cheese, for garnish
- Fresh basil leaves, for garnish (optional)
Instructions:
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Prepare the mushroom ragù: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent and fragrant, about 2 minutes.
- Add the sliced mushrooms to the skillet and cook until they begin to brown and release their moisture, about 5-7 minutes.
- Stir in the tomato purée, crushed tomatoes, dried oregano, dried basil, dried thyme, salt, and black pepper. Reduce the heat to low, cover, and simmer for about 10-15 minutes, stirring occasionally.
- Taste the mushroom ragù and adjust the seasonings as needed.
- Serve the pasta: Divide the cooked pasta among serving plates. Spoon the mushroom ragù over the pasta.
- Garnish with grated Parmesan cheese and fresh basil leaves (if desired).
