Ingredients:
  • 1 cup basmati rice
  • 1/2 cup yellow split mung beans (or red lentils)
  • 1 tablespoon ghee or coconut oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon grated fresh ginger
  • 4-5 cups water (adjust for desired consistency)
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Sliced lemon for garnish (optional)
Instructions:
  1. Wash and Soak: Begin by washing the rice and mung beans (or lentils) together in cold water until the water runs clear. Then, soak them in water for about 30 minutes. Drain and set aside.
  2. Sauté the Spices: In a large saucepan or a deep skillet, heat the ghee (or coconut oil) over medium heat. Add the cumin seeds and mustard seeds. When they start to sizzle, add the grated ginger, turmeric powder, ground coriander, and ground cumin. Sauté for a minute or until the spices become fragrant.
  3. Add Rice and Beans: Add the drained rice and mung beans (or lentils) to the spice mixture. Stir well to coat the grains and legumes with the aromatic spices.
  4. Simmer with Water: Pour in 4-5 cups of water, depending on your desired consistency. Add a pinch of salt to taste. Stir everything together and bring it to a boil.
  5. Reduce Heat and Cover: Once the mixture is boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 25-30 minutes. Stir occasionally to prevent sticking. You’ll know it’s ready when the rice and beans are soft and well-cooked.
  6. Serve and Garnish: Spoon the Kitchari into serving bowls. Garnish with fresh coriander leaves and a slice of lemon if desired.
  7. Enjoy Your Comforting Meal: Your homemade Kitchari is ready to be enjoyed. This wholesome dish is not only satisfying but also incredibly nutritious.
