Ingredients:
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 celery stalk, chopped
- 1 carrot, chopped
- 1 red bell pepper, chopped
- 2 tablespoons olive oil
- 1 can (400g) chickpeas, drained and rinsed
- 1 can (400g) diced tomatoes
- 100g red lentils, rinsed and drained
- 1 litre vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper, to taste
- Fresh coriander leaves, for garnish (optional)
- Lemon wedges, for serving (optional)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, celery, carrot, and red bell pepper. Sauté until they become soft and translucent, about 5-7 minutes.
- Stir in the ground cumin, ground coriander, ground cinnamon, and cayenne pepper. Cook for an additional 2 minutes to release the spices’ aroma.
- Add the diced tomatoes, chickpeas, red lentils, and vegetable broth to the pot. Season with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the lentils are tender and the soup has thickened.
- Taste the soup and adjust the seasoning with salt, black pepper, or additional cayenne pepper for heat, as needed.
- To serve, ladle the Harira Soup into bowls, and if desired, garnish with fresh coriander leaves and a squeeze of lemon juice.
