Kale and Bean Soup Recipe

Savour the rich, wholesome goodness of our Kale and Bean Soup. Packed with vibrant kale, tender cannellini beans, and aromatic herbs, this hearty soup is a nourishing delight that's perfect for warming up on chilly days

Ingredients:

  • 200g kale, washed and chopped
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 400g canned cannellini beans, drained and rinsed
  • 1 litre vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Grated Parmesan cheese for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and minced garlic. Sauté for about 5 minutes, until the vegetables begin to soften.
  2. Add the dried thyme and kale to the pot. Stir and sauté for an additional 3 minutes until the kale starts to wilt.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes until the vegetables are tender.
  4. Add the canned cannellini beans to the soup and simmer for an additional 5 minutes until they are heated through.
  5. Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
  6. Ladle the Kale and Bean Soup into bowls and, if desired, garnish with grated Parmesan cheese.
