Ingredients:
- 500g carrots, peeled and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 tablespoon olive oil
- 750ml vegetable broth
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
- Cream or yogurt, for garnish (optional)
Instructions:
- Heat the olive oil in a large soup pot over medium heat. Add the diced onion and sauté for 3-4 minutes until it becomes translucent.
- Add the minced garlic and ground cumin to the pot. Cook for another minute, stirring constantly to release the fragrance of the cumin.
- Add the chopped carrots to the pot and sauté them with the onion, garlic, and cumin for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes, or until the carrots are tender and easily pierced with a fork.
- Remove the pot from the heat and let it cool slightly. Use an immersion blender to puree the soup until it’s smooth and creamy. Alternatively, transfer the soup in batches to a blender, but be sure to allow it to cool slightly before blending, and use caution to avoid splattering hot liquid.
- Return the blended soup to the pot and reheat it gently over low heat. Season with salt and pepper to taste. If the soup is too thick, you can add a bit more vegetable broth to reach your desired consistency.
