Ingredients:

  • 200g green beans, trimmed and halved
  • 6 large eggs
  • 100g feta cheese, crumbled
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh dill for garnish

Instructions:

  1. Preheat the Grill: Start by preheating your grill to 180°C (350°F).
  2. Blanch the Green Beans: Bring a pot of salted water to a boil and blanch the green beans for about 2-3 minutes until they are tender yet crisp. Drain them and set aside.
  3. Sauté the Onions and Garlic: In an ovenproof skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until they become translucent and fragrant.
  4. Whisk the Eggs: In a bowl, whisk the eggs, crumbled feta cheese, salt, and black pepper together until well combined.
  5. Combine Ingredients: Add the blanched green beans to the skillet with the sautéed onions and garlic. Make sure they are evenly distributed.
  6. Pour in the Egg Mixture: Pour the egg and feta mixture over the green beans, ensuring it covers the entire surface.
  7. Cook on the Stovetop: Cook on the stovetop over medium-low heat for about 5 minutes, or until the edges start to set.
  8. Bake in the Oven: Transfer the skillet to the preheated oven and bake for approximately 15-20 minutes or until the frittata is set and the top is lightly golden.
  9. Garnish and Serve: Remove the frittata from the oven, garnish it with fresh dill, and let it cool for a few minutes. Slice and serve.
