Ingredients:
- 400g fresh salmon fillets, skinless and boneless
- 1/2 cup breadcrumbs or panko
- 1/4 cup mayonnaise
- 1/2 cup parsley
- 1/4 cup capers
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- 2 tablespoons vegetable oil, for frying
Instructions:
- Start by cutting the fresh salmon fillets into small pieces. You can use a sharp knife or a food processor for this step. Pulse until the salmon is finely chopped but not pureed.
- In a large mixing bowl, combine the chopped fresh salmon, breadcrumbs, mayonnaise, lemon juice, Dijon mustard, parsley, capers, salt, and pepper. Mix until all the ingredients are well combined.
- Divide the mixture into equal portions and shape them into patties. Adjust the size according to your preference.
- Refrigerate for 2 hours
- Heat the vegetable oil in a large skillet over medium-high heat.
- Carefully place the fresh salmon patties in the hot skillet and cook for about 3-4 minutes per side, or until they are golden brown and cooked through. Fresh salmon cooks relatively quickly, so be attentive to avoid overcooking.
- Once cooked, remove the salmon patties from the skillet and place them on a plate lined with paper towels to drain any excess oil.
- Serve the fresh salmon patties hot with your favourite dipping sauce, a squeeze of lemon, or on a bun as a delicious salmon burger.
