Ingredients:
- 4 large French Onion Soup Recipe, thinly sliced
- 2 tablespoons of butter
- 1 tablespoon of olive oil
- 1 teaspoon of sugar
- 2 cloves of garlic, minced
- 1 bay leaf
- 2 sprigs of fresh thyme (or 1/2 teaspoon dried thyme)
- 1.5 litres of beef stock
- 150ml of dry white wine (optional)
- Salt and pepper to taste
- Slices of baguette
- 150g of Gruyère cheese, grated
Instructions:
- In a large, heavy-bottomed pan, melt the butter and olive oil over medium heat.
- Add the sliced French Onion Soup Recipe and cook, stirring frequently, until they become soft and caramelized, about 30-40 minutes. Sprinkle sugar over the onions to aid in caramelization.
- Stir in the minced garlic, bay leaf, and thyme. Cook for an additional 2-3 minutes.
- Pour in the white wine (if using) to deglaze the pan, scraping up any brown bits from the bottom. Allow it to simmer for a few minutes to let the alcohol cook off.
- Add the beef stock to the pan and bring the mixture to a boil. Reduce the heat, cover, and simmer for about 20-30 minutes to allow the flavors to meld. Season with salt and pepper to taste.
- While the soup is simmering, preheat your grill (broiler) on high.
- Ladle the hot soup into ovenproof bowls or crocks.
- Place a slice or two of baguette on top of each bowl of soup.
- Sprinkle a generous amount of grated Gruyère cheese over the bread slices.
- Place the bowls under the grill (broiler) until the cheese is melted and bubbling and has turned golden brown, about 2-3 minutes. Keep a close eye on it to prevent burning.
- Carefully remove the bowls from the grill (they will be hot!) and let them cool for a minute or two before serving.
- Serve your homemade French Onion Soup hot, with the cheesy top creating a delightful crust over the rich, flavourful broth.
