  • 1 small piece of ginger root (about 1-2 inches), grated
  • 1-2 lemongrass stalks, bruised
  • 1-2 lime leaves (optional)
  • 1-2 tablespoons of honey or palm sugar (to taste)
  • 1 pinch of salt
  • 1 lime, juiced

Instructions:

  1. Combine water, grated turmeric, grated ginger, bruised lemongrass stalks, and lime leaves (if using) in a saucepan.
  2. Heat the mixture to boiling over medium-high heat, then lower the heat and simmer for about 15-20 minutes, allowing flavors to blend and beneficial compounds to be extracted from the turmeric and ginger.
  3. Remove solids by straining the mixture through a fine-mesh sieve or cheesecloth.
  4. While still warm, stir in the honey or palm sugar and a pinch of salt, adjusting sweetness as desired.
  5. Cool the mixture to room temperature.
  6. Stir in lime juice once cooled.
  7. Serve jamu over ice or at room temperature.
  8. Refrigerate any leftover jamu for up to 3 days.
