Ingredients:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 finely chopped onion
  • 1 finely chopped carrot
  • 1 finely chopped celery stalk
  • 2 cloves of minced garlic
  • 2 cups beef or veal stock
  • 1 cup crushed canned tomatoes
  • 1 bay leaf
  • 1 sprig of thyme
  • 1 sprig of parsley
  • Salt and black pepper to taste
Instructions:
  1. Melt the Butter: Begin by melting the butter in a saucepan over medium heat. This will form the base of your sauce.
  2. Sauté the Aromatics: Add the finely chopped onion, carrot, and celery to the melted butter. Sauté these vegetables until they become soft and fragrant.
  3. Infuse with Garlic: Stir in the minced garlic and let it cook until its delightful aroma fills the air. Garlic adds a wonderful depth to the sauce.
  4. Create a Roux: Sprinkle the all-purpose flour over the sautéed mixture. Stir continuously to create a roux, which will help thicken the sauce and enhance its texture. Allow the roux to cook for a few minutes.
  5. Pour in Stock: Gradually pour in the beef or veal stock while stirring vigorously to prevent the formation of lumps. This step ensures a smooth and velvety consistency.
  6. Introduce Tomatoes: Add the crushed canned tomatoes, bay leaf, thyme, and parsley to the mixture. These ingredients will infuse the sauce with robust flavors. Give it a good stir.
  7. Simmer to Perfection: Let the sauce simmer gently for 30-45 minutes. This allows the flavors to meld beautifully and the sauce to thicken to the desired consistency.
  8. Remove and Strain: After the simmering process, remove the bay leaf, thyme, and parsley. For a silky-smooth texture, strain the sauce to eliminate any remaining solids.
  9. Season to Taste: Season the Sauce Espagnole with salt and black pepper according to your preference. This step enhances the overall taste profile of the sauce.
  10. Versatile Base: Your delicious homemade Sauce Espagnole is now ready! This versatile sauce serves as an excellent base for a variety of dishes, adding depth and character to your culinary creations.
