Cabbage Slaw with Curry Vinaigrette

Indulge in the delightful combination of fresh cabbages, carrots, and a zesty curry vinaigrette in this Cabbage Slaw recipe. A perfect side dish for any occasion!

Ingredients:

For the Slaw:

  • 1/2 small green cabbage, finely shredded
  • 1/2 small red cabbage, finely shredded
  • 2 carrots, grated
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup roasted peanuts, chopped (optional for garnish)

For the Curry Vinaigrette:

  • 3 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon curry powder
  • Salt and pepper, to taste

Instructions:

  1. In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, sliced red onion, and chopped cilantro. Toss them together until well mixed.
  2. In a separate small bowl, whisk together the olive oil, rice vinegar, maple syrup, curry powder, salt, and pepper. Mix until the dressing is smooth and well combined.
  3. Pour the curry vinaigrette over the cabbage mixture in the large bowl.
  4. Toss the slaw thoroughly, ensuring the vegetables are evenly coated with the vinaigrette.
  5. Let the cabbage slaw sit for about 15-20 minutes in the refrigerator to allow the flavors to meld.
  6. Just before serving, garnish with chopped roasted peanuts (if desired) for an extra crunch and nutty flavour.
  7. Serve your Cabbage Slaw with Curry Vinaigrette as a refreshing and flavourful side alongside your favourite main courses.
